Weekly Recipe: Late-Night Cravings: A Succulent Sourdough Grilled Cheese

There is a specific kind of magic that happens in a quiet kitchen late at night. You’re exhausted, your stomach is rumbling, and you need something fast, comforting, and absolutely delicious.

Enter the ultimate midnight savior: the grilled cheese sandwich.

The Midnight Masterpiece

This wasn’t just any regular sandwich. I built this one using a couple of thick slices of my wife’s incredible homemade sourdough bread and stuffed it with thick-cut Tillamook sharp cheddar cheese.

When you’re tired, you don’t want a complicated process, but a few simple techniques make all the difference:

  • The Prep: Generously butter the outside of both slices of sourdough.
  • The Assembly: Layer in that thick cheddar.
  • The Secret Weapon: Drop it into the frying pan over medium heat on our gas stove, and put a lid on the pan.

Pro-Tip: Putting a lid on the frying pan traps the heat perfectly. It ensures the thick Tillamook cheddar gets completely melted and gooey at the exact moment the sourdough reaches that perfect, golden-brown crunch.

It’s quick, it’s easy, and it hits the spot every single time.

Leveling Up: Going Gourmet

While the simple version is perfect for a tired night, there are days when I want to spend a little extra time creating a true gourmet masterpiece. When the craving strikes and I have the energy, here is how I upgrade it:

  • Fresh Garden Staples: Thickly sliced garden tomatoes and fresh-plucked basil leaves straight from the herb garden.
  • The Savory Crunch: A few strips of crispy bacon.
  •  The Secret Ingredient: A thin layer of Duke’s mayonnaise on the inside of the bread for an extra rich, tangy depth of flavor.

Whether it’s a gourmet weekend creation or a quick midnight snack, nothing beats the classic comfort of melted cheese and crispy bread.

    1. Thanks for the comment, Safia! I feel like cooking food for me is a meditational experience that can sometimes take the stress off from the day. And definitely grilled sourdough cheese sandwiches are a comfort food for me.
